Standing by the river I became a bare wet foot. I shaved my head this Spring two weeks before the heart attack . All the smoke, all the animals and birds: I gave you back. There is a book now where we can meet, you can hold it in your hands. Standing by the river I became a riverbed. Every cell aware of itself, a year looking into mirrors, balancing on scales. I flip off the TV. Fuck fast food. First time in the Mennonite whole foods market I thought the long-skirted girls were hippies and felt oddly at home. Your thoughts change your body. The year I grabbed the wheel and spun this champagne Jeep around. Kelvin and I get married every time we turn off the television. Days after the attack my milestone was a crack at the end of the driveway: I can walk there, winded or not. To dissolve grief dissolve yourself. What a tan summer, shirtless svelt squinting at the horizon. This was the year I finally gave Kelvin reason enough to trust me. More bulk bagged granola and soy milk for breakfast please. Standing by the river I become the chance for rain.

Whether you’re a veg-head or looking for a low-fat version of this deli favorite, I think I’ve found a winning combination. I’ve tried “vegetarian Reubens” before prepared with marinated tempeh and they were gawd awful.

Trying a little experiment of my own I discovered that – for whatever reason – Morning Star Farms Tomato & Basil Pizza Burgers make a delicious corned beef substitute when paired with classic reuben ingredients. Like any reuben, the rye you choose and the freshness of the sauerkraut will make or break the sandwich. Choosing a low-fat dressing and swiss will also bring the health factor up a notch.

Prepare as you would your favorite sandwich with toasted bread and melted cheese. Hope you enjoy! I’m gonna have me one right now.
